In the beginning..

You may already know that coffee is harvested from a tree in the form of a cherry or berry. I have always called it a berry but know that either term is correct. Coffee is still one of the few products that is still hand picked. This ensures that the berries are not destroyed in the process. After this it may undergo a wet process by which it is soaked for around two days to allow the berries and seeds to separate and ferment. Then the resulting beans are dried. The other process is a dry process. The coffee berries are spread out to dry for 2-3 weeks and then the pulp is removed from the seeds.
